Strawberry Truffles
These creamy, sweet, strawberry-filled truffles covered in white chocolate make a perfect gift or treat for any occasion.

Ingredients:

For the truffles:

1 cup freeze-dried strawberries, ground to a fine powder

8 ounces cream cheese, softened

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

For the coating:

1 1/2 cups white chocolate chips

1 tablespoon vegetable oil or coconut oil

Optional garnish:

Crushed freeze-dried strawberries

Pink or red sprinkles

Instructions:

1. Prepare the truffle mixture:

In a medium bowl, beat the cream cheese until smooth.

Add the powdered sugar, ground freeze-dried strawberries, and vanilla extract and beat well. The mixture should be thick enough to form into balls.

2. Shape the truffles:

Take tablespoon-sized portions of the mixture and shape into balls. Place the truffles on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes or until firm.
3. Melt the white chocolate:

In a microwave-safe bowl, melt the white chocolate chips and vegetable oil in 30-second intervals, stirring after each, until smooth and glossy.
4. Coat the truffles:

Using a fork or dipping tool, dip each chilled truffle into the melted white chocolate, making sure it is completely coated. Tap off any excess chocolate and place the coated truffle back on the parchment paper.
5. Garnish:

While the chocolate is still wet, sprinkle crushed freeze-dried strawberries or decorative sprinkles on top.
6. Chill to set:

Place the truffles in the refrigerator for 20 minutes or until the chocolate is completely set.
